<p>PURPOSE:To carry out the removal of astringency of a large amount of astringent persimmon fruits in a short time in high efficiency, by holding the astringent persimmons in a particular holding container, putting the container in an impermeable bag, adding ethyl alcohol and dry ice to the bag, and sealing the bag. CONSTITUTION:The holding container 3 made of pulp mold is furnishd with plural cavities 1 to hold an astringent persimmon and arranged in zigzag form, and with ventilation holes 2 between adjacent cavities for holding astringent persimmons. A plurality of the holding containers 3 holding astringent persimmons 4 in the astringent persimmon holder 1 are stacked one upon another (the astringent persimmon on the lower container is positioned between the astringent persimmons on the upper container). The stacked containers are put into the bag 5 made of a synthetic resin, ethyl alcohol is sprayed through the opening 6 of the bag 5 to effect the impregnation of the container with ethyl alcohol (about 80-100ml of low-class distilled spirit per 10kg of the astringent persimmon), and dry ice is put into the bag through the opening 6. The bag is sealed by tying the opening 6 with a string 7, and left to stand for about 7 days to effect the removal of astringency of the astringent persimmon.</p> |
