Process for selecting and enriching musts by deep-freezing the berries. The process consists in deep-freezing the berries at a chosen temperature, especially between -6 DEG C and -15 DEG C and pressing them in the deep-frozen state to obtain a juice which is enriched, especially in sugar. The invention applies particularly to the production of grape musts for the production of wines. |
