PURPOSE:To obtain a fish paste product having excellent gel strength, by continuously charging a raw material composed mainly of ground fish meat into a stirring mixer, stirring and mixing the raw material in a manner to apply shearing strain to the raw material and continuously extruding the treated raw material. CONSTITUTION:A raw material composed mainly of ground fish meat produced by treating fish meat at <=10 deg.C is charged into a mixing head 7 of a mixer 1 through a pump inlet pipe 4 and a pipe 6 with a transfer pump 5. Separately, salt is introduced into the mixing head 7. The raw material is effectively sheared between a plurality of teeth 2a planted on the inner circumference of a cylinder 2 and a plurality of teeth 3a planted on the outer circumference of a drum 3. The treated raw material is taken out of the apparatus through a discharge port 9 at a constant rate of discharge controlled by a discharge controlling valve 10. |
