A process for removing at least the greater portion of the unpalatable outer bran (i.e. the bran layers excepting the aleurone layer) from wheat comprises treating the wheat which has been preferably cleaned, washed, heated, acid treated and partially cooked, with hot aqueous alkaline solution (e.g. sodium hydroxide) to loosen the outer bran to an extent that it will readily slip off if the wheat is squeezed between the fingers of the hand and then removing the loosen bran from the wheat by subjecting the wheat to turbulent water. The wheat may be cleaned by screening or blowing with air streams, washed by sprays of water, heated and/or cooked in hot water or steam and treated with hydrochloric, nitric, sulphuric, phosphoric, citric or acetic acid prior to the debranning step. The debranned kernels may be separated by flotation or screening. The debranned kernels may be bleached using one of the above mentioned acids and dried by a current of warm air. |
