PURPOSE:To prevent the abnormal increase of discharge pressure of a compressor and the damage of the compressor, by simultaneously operating a freezing circuit and a hot gas circuit by-passed from said freezing circuit and heating a freezing cylinder with a mixed gas obtained by the above operation. CONSTITUTION:In the production of soft ice cream, a compressor 11 is operated, a change-over valve 14a is opened and 14b is closed to form a freezing circuit consisting of the compressor 11 a condenser 12 an expansion mechanism 15 an evaporator 17 the compressor 11 and a mixed tank 2 is cooled with a cylinder 3 and a coil 18. In the cleaning of the cylinder 3, the change-over valve 14b is closed, a hot gas discharged from the compressor 11 is passed through a by-pass line 33 of the freezing circuit, sent to the evaporator 17 and mixed with a cooling gas discharged from the freezing circuit and the soft ice cream in the cylinder 3 is softened with the mixed gas and recovered. Thereafter, washing water is supplied from the water-supplying apparatus 21 through the tank 2 to the cylinder. The discharge pressure of the compressor can be stabilized by this construction.
