PURPOSE:To produce jelly grains for food, transparent in freezing, capable of ensuring the water holding property and conveniently subjected to bottling, weighing treatment, etc., by dripping an edible high polymer gelling agent containing a sweetener into an aqueous solution of a curing agent containing an organic acid and granulating an edible jelly. CONSTITUTION:An edible high polymer gelling agent, e.g. gelatin, gum arabic, alginic acid, etc., containing a sweetener, e.g. sucrose, glucose, etc., without containing an acid is dripped into an aqueous solution of a curing agent containing one or two or more of organic acids, e.g. citric acid, tartaric acid, lactic acid, etc., and as desired, further a calcium salt and/or potassium salt to granulate an edible jelly. The resultant mixture of the edible jelly grains with the aqueous solution of the curing agent is directly used as a product or the edible jelly grains are separated from the aqueous solution of curing agent and used as a product without washing with water. |
