PURPOSE:To produce boiled or steamed and dried rice capable of preparing rice cakes having good texture simply by adding hot water and mechanically pounding, by dipping rice grains in an aqueous solution containing ethanol, boiling or steaming the rice grains and drying the rice grains. CONSTITUTION:Raw material rice grains, e.g. glutinous rice, are washed with water and dipped in an aqueous solution containing ethanol, e.g. aqueous solution of ethanol, brandy or whisky, etc., with 2-45vol% ethanol concentration at room temperature - 40 deg.C for about 3-24hr. The rice grains are then drained, boiled or steamed by a conventional method to give boiled or steamed rice grains, which are then dried by a drying method with hot air, vacuum drying method while heating or vacuum freeze drying method, etc. |
