<p>PURPOSE:A solution containing acetic acid, calcium lactate and/or sodium acetate is applied to peeled or piece-cut fruits to improve the storability of fruits with discoloration prevented. CONSTITUTION:Peeled or piece-cut fuits are treated with a solution containing acetic acid, calcium lactate and/or sodium acetate. The concentration of acetic acid is adjusted to 0.5-1.0wt% in the solution. The amounts of calcium lactate and sodium acetate are 0.1-0.5wt%, respectively, both in case of single use and of combination. The solution improves the storability of fruits such as kiwi fruit and simultaneously prevent the fruits from being discolored by acetic acid.</p> |
