PURPOSE:To make it possible to detect and extinguish a fire in its early stages independently of the running of an exhaust fan by a method wherein a temperature sensor, which automatically puts the exhaust fan into running only when the temperature near a suction port lies within a certain temperature range, is provided near the suction port in addition to a fire sensor, which detects temperature near the suction port has exceeded a certain temperature. CONSTITUTION:In case that the running of an exhaust fan 18 is forgotten, because the exhaust fan 18 is automatically put into running and accordingly the temperatures of a fire sensor 19 and of a temperature sensor 22 do not rise to much, the temperature (h) of the fire sensor 19, which causes fire-extinguisher to be sprayed in an emergency fire, is allowed to be set lower. In case that the exhaust fan 18 is in running, first, the temperatures of the fire sensor 19 and of the temperature sensor 22 rise slowly. When oil igintes and the temperature of the temperature sensor 22 rises further up to about 60-70 deg.C, the running of the exhaust fan 18 is automatically stopped and consequently the propagation of flame into a duct or to the outside is prevented and at the same time the abrupt rise of the temperature of the fire sensor 19 results. When the temperature of the fire sensor 19 reaches (h), fire-extinguisher is sprayed from a fire-extinguisher spraying nozzle so as to extinguish oil fire.
