PURPOSE:To obtain a health food which can be easily reconstituted with hot water to give a food having original taste, flavor and nutrient, by griding and emulsifying edible algae to a specific size, adding and mixing sodium alginate thereto to obtain a sol, pouring the sol into a coagulation bath in the form of string and drying the coagulated string by a specific method. CONSTITUTION:An edible raw algae is ground and emulsified to a size of about 50-100 mesh and mixed with a small amount of sodium alginate to obtain a sol. The sol is poured into a solution of a harmless soluble salt of a metal having >=2 valencies in the form of a string to obtain a hardened gel string. The gel food is dried by using a vacuum freeze-drying method in combination with a microwave irradiation method. |
