PURPOSE:Crab power UDON rich in protein and calcium, containing vitamin B6, having improved digestibility, extensibility and high tensile properties, comprising crab powder A, crab powder and wheat flour in specific amounts, respectively. CONSTITUTION:1-3wt% crab powder A (preferably powder obtained by drying meat of crab such as Chionoecetes opilio, etc., at 60-180 deg.C and grinding it into 180-270 meshes), 0.5-3wt% crab powder (powder obtained by grinding coarsely crab including meat and shell, drying it at 50-180 deg.C grinding it into 100-400 meshes) and wheat flour are used to give the aimed UDON. |
