PURPOSE:To improve freezing, dehydrating, and drying process, and to obtain high-quality laminar agar, by placing ground raw agar on a reed screen, putting it in a refrigerator, freezing the agar, drying it. CONSTITUTION:An ingredient of agar such as Gelidium amansii, etc. is pretrated, extracted, filtered, coagulated to give raw agar, which is ground by a meat chopper or grinder. This ground raw agar is thinly placed on a reed screen in a state of dried laver sheet (laminar state), put in a refrigerator, and the ground agar is frozen. When the ground raw agar which was frozen and separated into a solid part (agar) and a liquid part (water) is taken out of the refrigerator and subjected to air-drying, the liquid part is melted and the agar is dehydrated. The agar is put in the refrigerator again, and forzen. Since the ground raw agar has low water content in the second freezing, it is frozen in about two hours. The agar is taken out of the refrigerator, the liquid part is melted, the agar is dehydrated, the agar is subjected to air-drying, dried to the desired water content (17-22wt%) in about 6hr, to give the desired agar. |
