PURPOSE:To store a loaf of sponge cake without deteriorating the freshness and facilitate the response to a period of large demand, by quick-freezing the loaf sponge cake, storing the loaf in an encased state, thawing the loaf, as necessary, placing ingredients for decoration thereon and providing an encased product. CONSTITUTION:A loaf of sponge cake 4 is quick-frozen at -20--40 deg.C for 2-3hr and put in a hermetically sealable box 6 and then stored in a cold reservation chamber. The loaf is taken out of the cold reservation chamber, as necessary, and thawed in a refrigerator at 0--5 deg.C for about 3-6hr to decorate the loaf with ingredients for decoration. The resultant fancy cake is then encased to give the aimed encased product.
