PURPOSE:In removing a very small amount of ultraviolet light absorbing component of impurity contained in middle-chain fatty acid triglyceride, to mass- produce the titled high-purity compound useful as foods, drugs, etc., inexpensively, by treating the triglyceride with a reducing catalyst in the presence of hydrogen. CONSTITUTION:Middle-chain fatty acid triglyceride containing a very small amount of an ultraviolet light absorbing component is treated with a reducing catalyst in the presence of hydrogen at 80-140 deg.C at <=10kg/cm<2> hydrogen pressure to purify and modify the titled compound. A catalyst mainly comprising nickel usually useful for hydrogenation for fats and oils or a noble catalyst such as platinum, palladium, etc., is used as the catalyst. The amount of it used is 0.01-5wt% based on the middle-chain fatty acid triglyceride of raw material. EFFECT:The aimed modified compound is recognized to have improved chroma.
