PURPOSE:To obtain an enzymic agent having a large degree of activation of ester interchange activity, by drying a hydrated material having lipase activity in contact with a fatty acid derivative in producing the enzymic agent having improved ester interchange ability under condition of low moisture. CONSTITUTION:A hydrated material having lipase activity is dried in contact with a fatty acid, lower alcohol ester thereof, surfactant and fatty acid derivative, e.g. triglyceride, etc., which is liquid at ordinary temperature, e.g. ethyl laurate or ethyl oleate, etc. The contact is carried out by mixing the enzymic hydrated material with the fatty acid derivative while spraying the fatty acid derivative or dissolving or emulsifying the fatty acid derivative in an aqueous solution of the enzyme. The drying is normally carried out at about <=50 deg.C and the preferred degree of drying is generally about <=10% moisture content.
