PURPOSE:To produce a dried food, especially powdered tea, etc., without using a specific pressure container or a high-pressure gas equipment, by adding ammonium carbonate or ammonium bicarbonate to a saccharide-containing tea extract and spray-drying the blend. CONSTITUTION:Tea such as tea, oolong tea, barley tea, etc., is extracted by a conventional procedure, the prepared extracted solution is blended with a dextrin having 10-25 DE or a mixture of the dextrin and cyclodextrin and adjusted to 15-58%(w/w). Then, the extracted solution is mixed with 0.8-2.8wt% ammonium carbonate or ammonium bicarbonate and spray-dried by a conventional procedure. |
