NEW MATERIAL:An amino acid derivative expressed by formula I (X is CF3CO or CCl3CO; Y is H, halogen, CN or NO2; n is 1 or 2; the structure, expressed by formula II and containing C at the * position is amino acid residue of L or DL isomer) and a slat thereof. EXAMPLE:N-Trifluoroacetyl-alpha-L-aspartyl-3-pyridylamide. USE:A low-caloric sweetening agent having a refreshing taste and high stability. PREPARATION:N-Trifluoroacetylaspartic or N-trichloroacetylaspartic acid anhydride is reacted with a 3-aminopyridine derivative to afford the aimed compound expressed by formula I. The above-mentioned compound has storing sweetness, e.g. the sweetness of N-trifluoro (or N-tricloro)acetyl-alpha-L-aspartyl-3- pyridylamide is 40 times (or 220 times) based on that of sugar (compared in a 5% aqueous solution). |
