A solid particulate food mix, having a tendency to cake on storage and clump in a liquid dispersing medium, is converted to a free-flowing, dry particulate food-mix dispersible in a liquid medium, by treating the mix with a mixture of water and a water-miscible volatile liquid, to homogeneously wet the mix, and then drying the mix to remove all of the liquids. A proportion of the mix is insoluble in both components of the liquid mixture, the remainder of the mix is soluble in one component of this mixture, this one component being present in an amount which is insufficient to dissolve the soluble part of the mix, and the liquid mixture as a whole is incapable of dissolving the mix. In the examples, (1) a pancake mix flour containing insoluble dried milk solids is treated with an ethanol-water mixture, blended and dried, and (2) a pancake mix, containing dried milk solids, dried whole egg, flour, leavening and seasoning agents, or a cake mix containing insoluble dried egg solids, are treated with acetone-water, blended and dried with heated air. |
