The invention relates to a vertical press for making pasta by extrusion, comprising a body 2 through which a path 3 is defined for a pasta mixture, a die 11 being supported by this body 2 downstream of the path 3, making it possible to increase production without over-increasing the weight of the apparatus and without excessively increasing the cost. The press is characterised in that the die 11 is annular and is detachably fitted to the body 2 where it forms the outer wall of an annular chamber 5.
