PURPOSE:To produce maltose, by treating amylose, amylopectin, starch or a partial hydrolyzate thereof with an enzyme produced by a bacterium belonging to the genus Bacillus. CONSTITUTION:Amylose, amylopectin, starch or a partial hydrolyzate thereof is treated with amylase G2 produced by a bacterium belonging to the genus Bacillus to give the aimed maltose. A bacterium which is separated from soil and identified as Bacillus megaterium is recognized to be novel and to produce a thermostable maltose forming enzyme and this enzyme is named amylase G2. Since this enzyme can not decompose alpha-1,6-glucoside bond of amylopectin, when amylopectin, starch containing it or a derivative therefrom is used as a substrate, saccharification reaction is promoted and maltose can be produced in high yield if the reaction is carried out in the presence of alpha-1,6-glucosidase such as isoamylase, pullulanase, etc. |
