PURPOSE:To form a readily reconstituting food material, having improved reconstituting property with hot water, capable of giving improved sense of eating and flavor resembling those of meat after reconstituting with hot water and suitable as ingredient materials for instant noodles, etc. CONSTITUTION:A readily reconstituting food material obtained by reconstituting a meatlike protein material with hot water, binding the material with a binder while heating, cutting the bound material to a suitable size and drying the cut material. A material obtained by extruding a protein raw material through a twin-screw extruder while heating and pressurizing is preferred for the above- mentioned protein material. Freeze-drying is preferred for the drying means in that the reconstitution property is good and deterioration in quality is slight. A binder obtained by using two or more of meat, soybean protein, oil and water such as combination of soybean and water, meat, soybean protein and, as desired, water, meat, soybean protein, oil and water, soybean protein, oil and water, etc. in the form of a paste or emulsion is used as a binder for the above-mentioned meatlike protein material.
