PURPOSE:Before made into paste, sweet corn is combined with reduced saccharide and a specific amino acid, then made into paste and heated, thus producing a processed sweet corn product with improved flavor, sweetness and color as a whole. CONSTITUTION:Reduced sacchaaride, preferably glucose and fructose liquid mixture, (1-15%) and amino acid such as glutamic acid, asparginic acid, glycine, proline or alanine (0.1-0.6%) are added to sweet corn paste or corn granules before made into paste and they are made into paste, then heated to 80-100 deg.C to form flavors and increase its yellow tone. |
