A semi-moist food, especially animal foods, having a moisture content of 15-40 wt. per cent. in a matrix of nutritional materials contains a stabilising amount of water soluble materials of which at least 5 wt. per cent. are subhexosic polyols, for example glycerol or propylene glycol, derived from hydrogenolysis, as defined, of an amylaceous material. The remaining amylase-derived moielies may be substantially reduced to sugar alcohol. The amylaceous material may be exosic, for example a monosaccharide such as glucose. |
