PURPOSE:To produce a conjugated food having high protein content wherein hydrogen peroxide is completely decomposed and removed, by irradiating a raw material mixture treated with hydrogen peroxide with microwave and treating the mixture enzymatically or fermentatively. CONSTITUTION:Soybean powder, fish meal or a mixture thereof is immersed in an aqueous solution of hydrogen peroxide and the prepared suspension is heat-treated by microwave irradiation at 100-3,000MHz. Then, the suspension is cooled approximately to normal temperature, incorporated with a mold extract of Aspergillus sojae or Aspergillus oryzae, simultaneously inoculated with Saccharomyces cerevisiae, kept at normal temperature, digested and fermented. |
