PURPOSE:To obtain an albumen liquid having high frothing power with simple operation in a short time even from an albumen liquid having high yolk content, by alkalinizing an albumen liquid with an alkalinizing agent, leaving the liquid at rest and returning to the initial pH with an acidifying agent. CONSTITUTION:An albumen liquid is added with an alkalinizing agent (e.g. aqueous solution of NaOH) to attain a pH of >=10, left for a definite period (preferably for 1-30min) and acidified to the original pH level with an acidifying agent (e.g. hydrochloric acid) to obtain the objective albumen liquid. |
