PURPOSE:To produce the titled processed food having sense of eating resembling that of potato chips and rich in crispiness, by heating a meat emulsion containing meat and a food material other than the meat to sterilize and coagulate the emulsion, cooling the coagulated material, slicing and drying the cooled material. CONSTITUTION:A meat emulsion obtained by mixing 50-90% meat with 50-10% food material, e.g. animal fat, potato flour, skimmilk powder, egg white flour, spice, water, etc., is filled in a casing, bound and heated by pouring into hot water, sterilized and coagulated to give a sausage-like material, which is then cooled to -5-+5 deg.C, sliced to 0.3-3mm thickness and dried to give <=10% moisture content. |
