摘要 PURPOSE:To produce a fermented food containing as much useful components as possible in high yield, by cultivating basidiomycetous mycelia in a specific liquid culture medium. CONSTITUTION:A liquid culture medium containing a carbon source consisting of at least one of grain or potato containing >=50% carbohydrate, nitrogen source consisting of at least one of bean or powdered green tea containing >=30% protein and, as necessary, glucose, MgSO4, potassium primary phosphate, etc., and constituted of only edible components is obtained. 0.5-20% basidiomycetous mycelia of the species of Ganoderma lucidum Karst. is inoculated into the liquid culture medium and cultivated under conditions of 2.5-5.5pH, 31-45 deg.C and 0.5-2.0l/min air flow rate for 4-15 days.
