In clearing and stabilising liqs. contg. polyphenols and/or proteins, the liq. (a) is pre-cleared in a centrifuge, (b) is mixed with stabilisers which adsorb polyphenols and proteins and with filter aids which retain fine cloudy materials, and (c) is fed to an appts. for retention of solids. The adsorbents and filter aids of the solid cake forming in the retention appts. are regenerated and recycled.
