A pastry pie is made from pastry prepared with a mixture of water, fat or oil, flour, salt and fine sugar, for example icing sugar or pulverised other particulate sugar. The pie filling may comprise poultry or game, fruit, and nuts or seeds. The filling may include a jelly comprising bone stock, herbs, wine, gelatine, and fresh fruit juice. After the filled pie shell has been closed and cooked the jelly composition is introduced through a hole in the pastry lid. In other examples the pie filling may be based on pork, ham or other meats or the filling may be vegetable. |
