Prodn. of pre-finished, deep frozen, roast potatoes from potato chips, esp. fried potatoes, in which the potatoes are first peeled and cut, then washed to remove starch, and the potato chips subjected to radiant heat emitted by a gas-heated thermal radiator until a gelatinised crust is formed on the surface, but no browning or bubble formation occurs then finish-fried and browned uniformly and finally deep-frozen after being dried. |
