The present invention relates to a new process for preparing glucose-free fructose from a solution of sucrose, characterised in that the sucrose is inverted to glucose and fructose by the action of an enzyme, in that the glucose is oxidised to gluconic acid by the action of an enzyme and in that the gluconic acid is extracted from the solution.
