PURPOSE:To obtain a salted, dried, processed food having fixed qualities, without being influenced by conditions such as weather, temperature, season, etc., by preserving meat of fish and shellfish or fowl or animal meat in an embedding, preserving bed consisting of rice bran, tea, salt and seasoning. CONSTITUTION:Meat of fish and shellfish or fowl and animal meat are embedded and preserved in a bed constituting of rice beam, tea, salt and proper seasoning. Before the meat of fish and shellfish or fowl or animal meat are embedded and preserved, the surface of the meat can be treated with an immersion solution consisting of a rice bran oozed component, a tea oozed component, salt and the proper seasoning. The blending ratio of the embedding and preserving ingredients is 50-58wt% rice bran, 15-50wt% tea and 3-20wt% salt. An allowable ratio of embedded and preserved meat of fish and shellfish or fowl or animal meat is about 5-10kg meat of fish and shellfish or fowl or animal based on 10kg embedding and preserving bed. |
