PURPOSE:To obtain the titled extract having a good taste free from a fish-like smell, by blending an animal extract with a KOJI, treating the blend at a specific temperature, subjecting it to solid-liquid separation. CONSTITUTION:An animal extract such as a fishes and shellfishes, animal meat, etc. is blended with KOJI (e.g., one obtained by inoculating an aspergillus such as Aspergillus oryzae, etc. for brewing into a raw material such as rice, etc., and KOJI is prepared in solid state), the blend is treated at <=65 deg.C, preferably at 30- 65 deg.C for >=3hr, and subjected to solid-liquid separation by pressing, filtration, etc., to give the desired extract. |
