PURPOSE:An adipic acid composition having improved shelf stability without causing reduction in integrity and elasticity of paste product, etc., and reduction in activity of gluten, containing specific ratios of adipic acid and a coating agent and an effective amount of an antimicrobial agent. CONSTITUTION:(A) (i) 10-70wt% adipic acid coated with (ii) 90-30wt% coating agent (preferably obtained by blending a hardened oil such as hardened oil of beef tallow with emulsifying agent and/or wax) and granulated is blended with (B) an effective amount of an antimicrobial agent (e.g., gylcine, etc.,), to give the aimed composition. |
