The invention relates to a process according to the generic clause of Claim 1. To avoid the subsequent mixing of solutions or suspensions into the butter or the butterfat to change the composition, according to the invention it is proposed to substantially harmonise before butter-making the proportions of fat and non-fat dry matter in the cream with the desired corresponding proportions of the finished butter.
