摘要 <p>Process for the vinification of a grape harvest in which the grapes are introduced into fermentation vessels (1) under a carbon dioxide atmosphere with a view to producing a carbonic maceration thereof; according to the invention, immediately before being placed in the vessel, the grapes are subjected to a microwave radiation or high frequency waves in an oven (4) whose power is suited to raising the grapes to a substantially uniform temperature of between 28 DEG C and 35 DEG C. The grapes are made to travel continuously in thin layers in the oven (4) consisting of a tunnel oven and are irradiated during this passage before being directed towards the vessels. The process markedly increases the aromatic quality of the wines obtained and guarantees that the intracellular fermentation which characterises carbonic maceration takes place under optimum conditions. &lt;IMAGE&gt;</p>
