PURPOSE:To produce a jam giving mild feeling to the palate and having light and refreshing taste, by adding sugar to a raw material of jam and fermenting the mixture. CONSTITUTION:A raw material of jam such as fruit or vegetable (e.g. strawberry, apple, orange peel, carrot, etc.) is sugared and left stand for a prescribed period to effect the semi-fermentation or complete fermentation of the mixture. The fermented raw material is heated and boiled down by conventional method. |
