PURPOSE:To produce a rice cake-like food having good palatability and excellent preservability, continuously, by heating and kneading glutinous rice with a twin-screw extruder. CONSTITUTION:Soaked glutinous rice is continuously charged to a twin-screw extruder optionally together with water, seasonings, oil or fat or other subsidiary raw material, subjected to the heating, grinding and kneading in the twin-screw extruder, extruded through a die and, if necessary, formed without delay. |
