<p>The invention relates to a biologically pure culture of extremely thermophilic bacterium THERMUS AQUATICUS (Variety T-351). The bacterium produces an enzyme CALDOLYSIN which exhibits proteolytic activity, particularly at temperatures of 65.degree.C to 85.degree.C and which is stable at temperatures up to 75.degree.C at a pH range of 4 to 12. The bacterium was isolated from a hot pool in New Zealand which was at 79.degree. ? 4.degree.C, low in sulphide and at pH 7.5 to 7.8. The cells were gram negative, non-motile, non-sporulating rods. The bacterium exhibits optimal activity at 70-80.degree.C.</p> |
