<p>1444991 Preparing modified phosphatides A E STALEY MFG CO 10 Oct 1973 [7 Dec 1972] 47191/73 Heading C2P A phosphatide having improved emulsifying properties is obtained by (a) treating a phosphatide-containing crude vegetable oil with water and a small amount (e.g. 0À05 to 1À0 per cent by weight) of an organic acid anhydride, (b) separating or partitioning the oil phase from the water phase to provide a wet gum comprising water and the phosphatide-acid anhydride reaction product, (c) mixing with the separated or partitioned wet gum an alkali metal base or an alkaline earth metal base and (d) drying the wet gum-base mixture at a temperature of at least 140‹ F. to a moisture content of less than 1% by weight, the amount of base used, the temperature and the time of treatment at temperatures of at least 140‹ F. being sufficient to yield a dry phosphatide product of an acid value of between 10 and 25. The phosphatide may be used in a bleached or unbleached form or bleaching may be carried out at any stage of the process with a conventional bleaching agent. In an example a modified lecithin is obtained from a hexane extracted crude soyabean oil using acetic anhydride as the acid anhydride and sodium hydroxide as the base. Modified lecithin products obtained by the defined process are particularly useful as emulsifiers for powdered food products which are adapted to be reconstituted with aqueous media.</p> |
