The invention relates to an arrangement for controlling continuously operating temperature-control machines. Such machines serve for treating chocolate masses which have to be made available in a temperature-controlled manner to the following chocolate-processing machines such as coating installations, pouring machines, hollow-body installations and the like. The aim of the invention is to develop a complex control for the continuously operating temperature-control machines, in which in particular the crystallisation processes in the chocolate mass are included to a greater extent. The aim is achieved according to the invention by comparators for the temperature comparisons between the inlet temperature and the outlet temperature of the coolant being arranged at the inlet and the outlet of the double casing of the heat exchanger in each cooling stage and holding stage, and comparators between the value for the part-crystalline state calculated by an electric measurement transducer and a recipe-dependent predetermined set value being arranged in each cooling stage and holding stage, and coordinating outputs being arranged between the cooling stages and holding stages, and a central display known per se being assigned to the arrangement. <IMAGE>
