SOLID OIL-IN-WATER TYPE EMULSION AND ITS PRODUCTION

PURPOSE:To improve shape retention and decrease water sepn. by compounding respectively specified ratios of emulsifiers such as 1, water soluble polyglycerol fatty acid ester 2, monoglycerol fatty acid ester and sorbitan fatty acid ester. CONSTITUTION:An oil phase component is prepd. by adding the emulsifier such as monoglycerol fatty acid ester having >=30 iodine number to lipid having >=45wt% solid fat ratio at 10 deg.C at 3-15wt% by the weight of the oil phase component. The water soluble polyglycerol fatty acid ester is added and dis solved therein at 0.05-1.0wt% of the water phase component to prepare the water phase component. 70-39wt% water phase component (by the weight of the final product) and 7-30wt% oil phase component (by the weight of the final product) are mixed. The mixture is preliminarily emulsified and homog enized and is then quickly cooled, by which the average grain size of the fat cells of the oil-in-water type emulsion is adjusted to <=0.5mu and the solid oil-in- water type emulsion is produced.
