PURPOSE:The titled food, industrially and advantageously obtained by adding gaseous carbon dioxide or carbonated water to a mixed system of a colloidal material, e.g. carrageenan, and water, etc., hermetically sealing the resultant mixture and heating and cooling the mixture and having improved platability. CONSTITUTION:A refreshing gelatinous food obtained by normally adding and mixing sugar, sour agent, e.g. citric acid, water, etc., with a colloidal material, e.g. carrageenan, pectin, agar, xanthan gum with locust bean gum, gelatin or sodium alginate, etc., heating and cooling the resultant mixture to gel, pressing gaseous carbon dioxide therein or adding carbonated water thereto, putting the resultant mixture in a pressure-resistant container, heating and cooling the container and having normally 2.0-6.0 gas volume. Sodium hydrogencarbonate and sour agent, e.g. citric acid, may be added together in place of the gaseous carbon dioxide. |
