PURPOSE:To obtain the titled food having improved qualities and economic efficiency while preventing discharge of highly concentrated waste water without requiring blanching with warm water, etc., by frying cut pieces of potato with a low-temperature oil and freezing them. CONSTITUTION:Firstly, potatoes are washed, peeled and cut into a fixed shape. Then, the cut potatoes are washed with water, dehydrated and immediately fried with an oil at 120-160 deg.C for 1-10min. Further, the oil is sufficiently removed, the potatoes are precooled and finally frozen at <=-10 deg.C, to give the aimed product. The product is usually fried two times and used for food. |
