In this method for drying a frozen product, without passing via the liquid phase, the product to be dried is subjected, for the period required for complete drying, to a microwave electromagnetic field in a cooled chamber, the environment of the product is advantageously maintained at a low pressure and a flow of cold dry air is circulated through this environment. The device for implementing this method comprises a device 1 for applying a microwave electromagnetic field, a generator 6 of dry cold air, a vacuum pump 8 and adjustment means 11-16 for preventing the formation of liquid in the product. <IMAGE>
