PURPOSE:To prepare carbonated beverage having foaming properties like beer, hardly containing alcohol, by heating a solution of saccharide blended with fruit juice and saponin, cooling it, filtering it to give a filtrate, adding water and CO2 gas to the filtrate, making the blend into carbonated beverage. CONSTITUTION:5pts.wt. solution of saccharide (solid content) consisting of malt juice blended with sucrose, glucose, etc. and adjusted to a given saccharide concentration is mixed with 3-5pts.wt. fruit juice (e.g., lemon juice) and 0.005- 0.02wt% saponin, heated at 50-100 deg.C for 1-20min, cooled to 0-30 deg.C, and filtered to remove precipitate. The prepared filtrate is mixed with water, CO2 gas, and, if necessary, an additional matter such as spice essence, foreign wire, etc. to give carbonated beverage.
