PURPOSE:To separate only alkali proteinase from a crude enzyme liquid containing alkali proteinase, in high efficiency, by permeating the liquid with an ultrafiltration membrane having a specific fractionation molecular weight. CONSTITUTION:Aspergillus oryzae 460, Aspergillus soja 1-112, Aspergillus soja 1-190, etc. is cultured in a solid or liquid, and the cultured product is extracted with an aqueous solvent to obtain the extract liquid or culture liquid. The extract liquid or culture liquid is filtered to obtain a crude enzyme liquid containing alkali proteinase. Permeation of the crude enzyme liquid with an ultrafiltration membrane having a fractionation molecular weight of 5,000-15,000 affords the separation of only alkali proteinase in high efficiency. |
