6-Deoxy-D-glucose, an intermediate used for the preparation of Furaneol (registered trademark of Firmenich SA, Geneva) is prepared by halogenation of methyl alpha-D-glucopyranoside with phosgene in the presence of N,N-dimethylformamide and hydrogenolysis of the resulting chloro derivative. According to an embodiment the chloro derivative is converted into the corresponding iodo or bromo derivative before being hydrogenolysed. Its iodo or bromo derivatives can be obtained both as transition intermediates by a cathodic reduction reaction of the chloral compound in the presence of sodium iodide in N,N-dimethylformamide. The desired 6-deoxy-D-glucose is finally obtained by hydrolysis of the resulting product in an acidic medium.
