PURPOSE:To prevent the shape collapse of a solid material and clogging thereof in pipes, by heat-treating a liquid material containing a solid material in a scraping type heat exchanger and cooling the resultant heat-treated liquid material using a tubular heat exchanger having specific pipe. CONSTITUTION:A liquid material containing a solid material heat-treated in a scraping type heat exchanger is cooled in a tubular heat exchanger having pipes with a diameter of 5/8-10 times based on the maximum of the sum of respectively added length, width and height of the solid material and 8-64mm above-mentioned diameter. The maximum value of the sum of the added length, width and height of the solid material specified by the above-mentioned method should be 3-83mm. If the maximum value is <=3mm, the function as food ingredients can be fulfilled. On the other hand, if the maximum value is >=83mm, too much time is required for sufficiently heating or cooling even the central part of the solid material. |
