PURPOSE:Rice grains as a starting material are washed with pressurized carbon dioxide to extract and remove out lipids, smelling components and bran components, then, soaked in water, boiled and cooled down and the resultant boiled rice is used to achieve high-productivity SAKE production in good yield and good quality. CONSTITUTION:Rice grains are washed with pressurized carbon dioxide to remove lipids, smell components and saccharides, then soaked in water, preferably in the combination with protease, steamed. Then, the steamed rice is used as the starting rice for KOJI making or as a mash materials for SAKE fermentation to make Japanese SAKE. |
